Peach Birthday Cake

I was very blessed to have been able to make a peach cake for my birthday. Yes, I made my own birthday cake. But my mom did all the icing as I have no experience icing a cake. I will have to learn and practice that. My mom did a great job with all the whipped cream icing and assembling the 3 layer cake. I am so blessed to have such a patient mom to help.




This cake instruction can be found here on Youtube. Firstly, the cake has 3 sponge cake layers. I baked these the night before. They were less than an inch tall and was 8 inch in diameter. I made these. They were easy as I used a sponge cake mix. I only had to add eggs, oil and water. Just mix all the ingredients and pour into 3 tins and bake in the oven.


The next day, I made the peach filling. I made these by stewing canned peaches in a little sugar and lemon juice, then adding cornflour to thicken it. Also simple, and I could do it. I had to let it cool before using it in the cake so when it was cool enough I put it in the fridge to make it cold.


Lastly, I made the whipped topping - basically whipped cream, sugar and gelatine with water. The whipped cream has to be firm for it to hold and I was careful to put all utensils into the fridge and make everything as cool as possible. My mom handled it from here and iced the cake. I used yellow and pink food colouring to dye the cake yellow and pink. The base is pink and the middle is yellow while inside the cake and the top of the cake is white. Lastly we sprinkled pink sugar (granulated sugar with colouring powder) on top and added 2 little pink flowers. Very pretty.


Overall it was an awesome cake. It turned out just like I expected and I was very happy with it. It was actually not only pretty but very delicious too! It is a light summery cake and I like the taste. My mom helped with all the icing and I was so happy to be able to have such a nice cake for my birthday. 😋
