Mexican Dinner

I had the best dinner yesterday as I was celebrating my birthday. We had Mexican food for dinner! And also mango mousse for dessert and a peach birthday cake. It was all really awesome.

My aunt from the US had brought us some tortilla wraps and a can of salsa! My brother was holding on to them first. I suggested this to my brother and he loved the idea so much he went to the supermarket near his office to grab a few things like chilli con carne powder, refried beans, lettuce, greek yoghurt and minced beef! Seemed like he had a plan. 

I was making the cake when my brother arrived. After I finished the cake and let it rest in the fridge we started on the Mexican authentic tacos.

The tortilla wrap came with instructions to deep fry it in oil. My mom did this. We had never fried tortillas before so it was a first for us and a learning experience! So my mom fried the tortillas and let them dry with kitchen tissues.



Then my brother cooked the mince beef in chilli con carne powder and cut up the lettuce and onion. I on the other hand cooked my chicken chilli. Basically it was a can of tomato sauce with onions, zuchinni, shredded chicken breasts and a bit of cheddar cheese. It was seasoned with the leftover chilli con carne powder, cumin and chilli powder. Was supposed to be spicy but was quite mild in the end. (We are used to really spicy food!)

After that I shredded some more cheddar cheese and set everything out on the table for everyone to eat. Then came the fun part....  assembling the tacos! Each of us assembled our own tacos. First you have the tortilla wrap and you add the beef or chicken. Then slather a bit of the refried beans and salsa. Then sprinkle with the lettuce, onions and cheese. Lastly add hot sauce and the greek yogurt for a little extra kick. 




It was a great experience eating it. I never get to eat this here and the ingredients are so expensive. If I were in the US, it would be really cheap and easy to find the ingredients. It was nice of my aunt to pass these to us as we had a great time and enjoyed eating the tacos... super yummy!
