Yesterday I celebrated my birthday with a feast. My birthday is not for a while yet but we celebrated it on a weekend so my brother could join in.
One of the desserts was a mango mousse. It was a really satisfying, sour, and refreshing mousse. It used real mango from the mango fruit. The mango was a yellow mango, not those bright orange ones. So the colour is not as vibrant. It was more yellow hued.
It wasn't as firm as I expected, maybe because I didnt use all of the gelatin mixture that was in the recipe. It was getting too runny and I was afraid it wouldn't set so I only poured in half the gelatin mixture from the recipe. Yup, mousse usually has gelatin.
Below is the recipe I used. I halved the recipe to make it a smaller batch. I got it here.
Ingredients
1 cup mango pulp
1 tbsp gelatine
3/4 cup warm water
1 cup sour cream
125 g cream cheese
1/2 cup sugar
- Mix the warm water with the gelatine and let cool.
- Blend sour cream, cream cheese, sugar and add the gelatine mixture until smooth.
- Add in the mango and blend until smooth.
- Pour mousse into little cups and chill for at least 2 hours before serving.
The finished product was nice. The texture was a little soft as you can see below. I am not sure if it was too little gelatine or not. But it was still good and my family really enjoyed it a lot. My brother liked it especially. 😄
