Green Tea Mousse Cakes

I recently made some green tea mousse cupcakes. Basically they are little mousse cakes served in small ramekins. So cute and pretty!

I have been meaning to make green tea mousse cakes for a while now and I got the chance to because my mom had some scrap butter cake she trimmed off my grandfather's birthday cake when she levelled it. She had to level it so she could layer it. The cake had 2 layers with buttercream icing in between. I just cut the scraps of butter cake into little circles and put them at the bottom of the ramekins. 



The mousse recipe originally contained some yogurt but I forgot to add it in last minute! But it turned out fine. I have therefore adapted the recipe to suit my circumstances. I made some mistakes along the way like the issue with adding too much water to the gelatine. But it was so forgiving a recipe that it still set anyway. It turned out better than I expected. I didn't think it would be firm at all. Was expecting it to be runny because of too much water. 

Below is the recipe, correcting my original mistakes.

Ingredients
1 tbsp gelatin
80 ml hot water
1 and a half teaspoon matcha green tea powder
250g Whipping cream
4 tbsp icing sugar

Directions
  1. Mix 1 tbsp gelatine to the 80 ml hot water and add in the green tea powder. Let cool. 
  2. Mix the whipping cream with the icing sugar and beat it until it forms stiff peaks
  3. Fold in the whippng cream with the gelatine and green tea mixture
  4. Pour the mixture into individual ramekins or small cups
  5. Chill for at least 2 hours before serving



It turned out so well that I have to save them for my brother and aunt and I feel like eating them all! The taste is a bit mild though so I should have put above amount of green tea powder instead. But it still looks pretty and I am happy with it. I hope to make it again soon in the correct way. 😃
