There was another birthday party to be had! My grandma and Aunty L came over today for a visit and we made another 2 cakes last night so we could have them for tea. They wished me happy birthday and my grandma gave me some pocket money! Thanks grandma!
So I got busy last night making a cheesecake with some pre-mixed cake ingredients Aunty M gave us from the US. My mom made a carrot cake in her usual style and iced it with fresh cream cheese icing. So yummy...
Here is the cheesecake set Aunty M gave me. It is Jello brand and comes in 2 packets. Packet 1 is for the biscuit crust. I just have to add some butter and sugar. Packet 2 is for the cheesecake filling and I added cold milk. It was super easy to make. I pressed the biscuit crust into the pie dish then let it set while I made the cream cheese filling. Then I poured the cream cheese filling into the crust. It took a short while only and I let it set in the fridge. Then I focused on adding some extra toppings to the cheesecake... a caramel topping! It was a salted caramel sauce I made.
I made the caramel sauce with butter, brown sugar, whipped cream, salt and vanilla. It was easy to make and I made it using the microwave. It turned out too runny. I am not sure why. Maybe because I didn't heat it properly and kept taking it out of the microwave to check. Anyway, it turned out only a little runny and still tasted good.
So I left the cheesecake to set overnight and today I put on the caramel topping and added some toasted pecans. Yum! I let it set in the fridge again until tea-time.
My mom iced the carrot cake today. She made the icing beautifully and added a swirl on the top. How creative! Then she decorated the cake with some sugar butterflies and a ladybug. It looked so pretty!
Soon it was time to cut the cake. Carrot cake is one of my grandma's favourite cakes. My aunt said she liked the caramel cheesecake and she asked me what cheese I used! Lol! I got it out of a box! Omg so funny!
Here is what is left of the cakes. My aunt and grandma took back some cake and also some of the peach cake (not forgotten, I still ate it).
Overall it was a really fun day and we all enjoyed the cakes so much. I am so blessed to have had 3 birthday cakes - the peach cake, the carrot cake, and the salted caramel cheesecake! Awesome! I hope I don't get 3 years older lol. Thanks Aunty M for the cake mix... you made my day, and the cakes were well received! Thanks to my mom too. I couldn't have asked for more! 😋
