Blueberry Cheese Puff

Last week I made blueberry cheese puff for dessert. Basically it is cream cheese, sugar and a fruit of your choice like blueberries in between 2 pieces of puff pastry and baked until puffed up.



It was super simple and I was wondering if it would turn out alright. I remembered other puff pastry recipes I tried like chicken pot pie and egg braids... they turned out ok but they were savoury. This was sweet.

It turned out that puff pastry goes better in savoury dishes. This dessert was just alright for me. But it was quite appetising and not difficult to eat as well. My family had it with ice cream but I think it was ok plain too.

Below is the recipe.

Ingredients
2 pieces of puff pastry to fit a 8x8 inch pan
1 cup of frozen, dried or fresh blueberries
250g cream cheese, room temperature
3-4 tbsp icing sugar
  1. Once the cream cheese is softened at room temperature, mix in the icing sugar.
  2. Line the pan with one layer of puff pastry.
  3. Spread all the cream cheese onto the puff pastry
  4. Scatter blueberries on top of that
  5. Cover with another layer of puff pastry
  6. Bake in oven at 180℃ for 25 minutes or until puffy. 
  7. Let cool before cutting
Below is what the filling looks like! Tonnes of blueberries on top of the cream cheese layer. Can't go wrong with adding fruit to anything. 



It was a good dessert but what struck me most is how easy it was. The dessert was a good snack for later too. It packs well and can be eaten plain or with ice cream. I am glad I tried making puff pastry dishes again. They are so fun to bake.
