Recently we finally dug up our sweet potatoes. The instructions were to let them grow for 100 days. Finally it came time to dig them out. We didn't expect much from our sweet potatoes, thinking they will be small like the size of a thumb. The instructions were to raise a bed with loose soil and plant the sweet potatoes, adding banana peels as fertilizer in order to grow the sweet potatoes bigger.
We were so pleasantly surprised when we finally dug them out. The white sweet potatoes were the biggest. The biggest one was the size of my hand. The orange sweet potatoes were quite sizeable too. I couldn't wait to cook them. The possibilities!
Below are the white sweet potatoes freshly dug out from the bed. You can see it is quite big compared to the cutter.
These are the white sweet potatoes on a scale. You can see they were 838 grams! For 3 sweet potatoes...
These were the orange sweet potatoes. Quite big indeed. And there were 3 of them. We were so glad the orange sweet potatoes grew too.
I finally got to eat my long anticipated sweet potatoes. The first recipe I tried were sweet potato fries. What else?! It was the most natural and basic way I could think of. You really get to taste the sweet potato by itself. I sliced them into sticks, added a drizzle of olive oil and salt and tossed them.
Then I baked them in the oven for 20 minutes until they were soft in the centre and crisp on the edges. I really browned them well. I pierced them with a fork every now and then to check. It turned out to be a great tasting sweet potato french fry feast! My parents said they were relly nice. I really enjoyed them. I could have eaten the whole batch myself. Great sweet potatoes!
