Yesterday I gave my mom a much appreciated break from cooking dinner and I made a cauliflower lasagne. It was so super simple to make that even I can't mess it up. Provided you add enough water to the dish, it is quite difficult to go wrong.
The finished product was a cheesy success and my parents liked it, although my mom said she would prefer it with meat. Of course. But I wanna be vegetarian more often and cauliflower is delicious! I think cauliflower goes well with this dish. The recipe for this is below.
Ingredients
9 lasagne sheets
1 can of chopped tomatoes or pasta sauce
1 can of water from the same can
2 cups of chopped cauliflower
4 tbsp ricotta or cream cheese
1 cup Mozarella cheese or cheese of your choice for topping
Italian herbs
Salt
Pepper
Directions
- Spread some of the chopped tomato sauce on the bottom of a lasagne dish
- Add 3 lasagne sheets in one layer
- Top with 1 cup chopped cauliflower, tomato sauce and 2 tbsp ricotta cheese
- Add 3 more lasagne sheets
- Repeat steps 3&4
- Top with more tomato sauce
- Pour in the can of water
- Add Italian herbs, salt and pepper
- Top with 1 cup Mozzarella cheese or cheese of your choice
- Cover the top with foil and bake at 180 degrees C for 35 minutes or more
- Remove the foil and bake for another 10 minutes or more until cheese is browned
I really liked this simple dish but if you want to make it more complex, you can add additional ingredients like mushrooms, bell peppers, onions or anything else.
