Easter dinner

Today was Easter Sunday and I was planning since yesterday to do an Easter brunch! I was inspired by some blogs online and wanted to cook something to celebrate Easter and spring. (Even though in Malaysia we don't have seasons.)

Turns out brunch didn't happen because I woke up too late. By the time I woke up my parents had gone out to buy groceries and had their lunch already after shopping. I cursed myself for sleeping in! I wanted a light brunch so I thought I had missed my chance as dinner has to be something more substantial. But my mom said no, its fine to have a light dinner. A light dinner is healthy and I could always make more of it. So it was set... I was doing a Easter dinner!

I made a Nicoise salad with salad leaves, lemon dressing and boiled egg. Then I made mango, ham, cucumber and cheese skewers. And lastly, toast with cream cheese and sliced radish.

I had a general idea of what I wanted to make and ended up improvising with what we had. It was just a very basic meal. No cooking involved, just some easy preparation and assembling all the ingredients.


For the Nicoise salad, it was very basic. Just some assorted salad leaves and cherry tomatoes with lemon and olive oil dressing. I topped it with sprinkles of parmesan and added several boiled eggs. Nothing special at all. Healthy and simple.


The mango skewers were made with cubed mangoes, cubed cheese, chicken ham and Japanese cucumbers. Just all pierced through with a skewer. So simple. The mangoes were so ripe and was so mushy. Looks so red on camera too. I have been enjoying this batch of mangoes. The ham was bought today at the supermarket.


Then we have the toast. I grated some lemon zest from the lemon that I juiced for the salad. My mom sliced some radishes very thinly and cut up some garlic. Then she took some chinese celery leaves from the garden. Then when the bread was toasted, I topped the toast with cream cheese, garlic, radishes, chinese celery leaves, lemon zest and black pepper. The result was a refreshing, herb-ey cheese toast.



So that was my Easter meal. A light, refreshing and festively spring spread. In case we get hungry later we can eat the ham! Haha. Anyway it would have been better as a brunch but turns out to be a simple dinner instead.
