Today I came back from dim sum with my family and I craved something sweet. It is also Easter tomorrow and the start of spring so I wanted something refreshing and spring related. I had seen some people planning to make crepes for Easter online.
I used an old recipe that I had tried before. I will put the recipe below. I think, however, the recipe depends on how thick is your batter. It should be a quite runny consistency so you can get nice, thin crepes. I will have to try making this again as this time it was too thick. Still nice, but could be better.
Here is the recipe -
2 eggs
1 1/2 cups milk
3/4 cup plain flour
3 tbsp sugar
1 tsp vanilla essence
Butter to grease the pan
I had put 1 whole cup of flour but I think 3/4 cups flour should be fine.
Basically you mix up all the ingredients and put butter in the pan to grease it and pour a ladle of batter to make one crepe. When the edges start to solidify, you flip it over and cook it on the other side. Add butter to the pan after every crepe.
It was messy when I did it as I couldn't flip it over. So my mom had to help!
In this picture I garnished it with jam and blueberries. I later ate it with a dollop of ice cream. So nice!
